A photo taken on a phone normally records GPS coordinates to within a few metres, the exact time, the camera and lens model, and often a serial number. None of it is visible in the picture, and all of it is still in the file.

Stripping it is a couple of seconds of work: re-saving through a canvas drops every metadata block, because a canvas only ever holds pixels. That is exactly what this tool does, and the output is a plain re-encode, so nothing about the visible image changes.
